Like my oatmeal raisin cookies, these oatmeal cookies are full of healthy whole grains, antioxidant-rich Ghirardelli dark chocolate chips, and they have less sugar than most cookies.
As with my other cookie recipes, you can preserve the freshness of these oatmeal chocolate chip cookies by storing them with a slice of white bread in an airtight container.
Oatmeal Chocolate Chip Cookies
- 1/3 cup butter
- 1/2 cup brown sugar
- 1/3 cup white sugar
- 1 egg
- 1 tsp. vanilla extract
- 1 cup white whole wheat flour
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 tsp. cinnamon
- 3/4 cup quick cooking oats
- 3/4 cup dark chocolate chips (such as Ghirardelli chocolate chips or Hershey's special dark chocolate chips)
Preheat oven to 350 degrees. Beat butter and sugars with an electric mixer. Beat in egg and vanilla. In a medium mixing bowl, stir together flour, baking soda, salt and cinnamon. Stir flour mixture into sugar mixture until well combined. Stir in oats, then chocolate chips. Roll dough into walnut-sized balls and place 2 inches apart on ungreased cookie sheets. Bake 10-12 minutes.
Makes 30 cookies.
