Pumpkin Smoothies
- 4 whole wheat graham crackers (squares)
- 1 cup frozen banana slices
- 1/2 cup ice
- 3/4 cup canned pumpkin (unsweetened)
- 1-1/2 cups orange juice
- 1/2 cup nonfat vanilla soy milk
- 1/2 cup nonfat vanilla yogurt
- 1 Tbsp. brown sugar
Put all ingredients in a Vita Mix or regular blender in order listed and blend until smooth. Optional: Garnish with additional graham cracker crumbs.
Serves 3.
Per serving: 206 calories, 2 g fat, 2 g cholesterol, 4 g fiber, 6 g protein, 199% Vitamin A, 101% Vitamin C, 11% calcium, 9% iron
