One of the world's true super foods, quinoa is a complete protein, containing all 9 essential amino acids. Quinoa is also a great source of fiber, iron and magnesium.
Quinoa is an especially valuable super food for vegetarians and vegans who are concerned about getting enough protein in their diets.
Although I think of quinoa as a chewy or nutty grain, similar to rice or couscous, it is actually a seed of a leafy plant, related to spinach and swiss chard.
Where can you buy quinoa?
Many local supermarkets carry quinoa, quinoa flakes or quinoa flour. You can also buy quinoa at your local Whole Foods Market, Wild Oats Marketplace, and online at Amazon.com.
Below are some great vegetarian recipes using quinoa. I do like to use cheese in some of my quinoa recipes, because I think it "softens" the chewiness of the quinoa, especially for kids. But if you are looking for vegan recipes, simply use soy cheese.
