Sweet Potato Bread

A sweet yeast bread that can be made in minutes with a bread machine

Sure to become one of your favorite bread machine recipes, this sweet potato bread combines all the flavors of fall in a tender yeast bread.

This is one of those bread machine recipes that works great as a basis for french toast. Serve warm with apple butter or topped with gourmet peanut butter.

Whole Foods Market sells canned sweet potatoes without syrup. If you can't find them, just use regular canned sweet potatoes and drain them.

Sweet Potato Yeast Bread

  • 1 cup mashed canned sweet potatoes (drained)
  • 1/4 cup skim milk
  • 2 Tbsp. butter
  • 1 large egg
  • 2 cups bread flour
  • 1 cup whole wheat flour
  • 1 Tbsp. brown sugar
  • 3/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1-1/4 tsp. bread machine yeast (or active dry yeast)

Add ingredients to your bread machine in order specified by manufacturer, using the basic or white bread cycle with a light crust.
